Easy Chicken Nachos
Ingredients
- 1 cup canned low-fat refried beans
- 1 bag totilla chipa
- 2 cups Rotisserie Chicken chopped
- 8 oz Mexican cheese blend shredded
- 1/2 cup Tomatoes diced
- 1/4 cup Scallion chopped
- Salsa
- guacamole
- low fat sour cream
Instructions
- Preheat over to 400. Microwave beans with just enough water to make them spread easily.
- Arrange chips on a large foil-lined baking sheet. Top with beans, chicken, cheese, tomatoes, scallion.
- Bake 10 minutes or until cheese is melted and bubbly.
- Serve with sides of salsa, guacamole, sour cream.
