Chicken Salad Sandwich Recipe
Ingredients
- • 1 lb. (500 g.) skinless and boneless chicken; poached, steamed or lightly grilled.
- • 3 Tbs. finely chopped celery.
- • 2 Tbs. finely chopped onion.
- • 2 Tbs. drained capers.
- • 2 Tbs. Yogurt.
- • ¼ cup real mayonnaise, preferably homemade.
- • 1 tsp. red wine vinegar, or to taste.
- • Salt and FG pepper to taste.
- • 1 tsp. finely chopped parsley.
- • 2 tsp. finely chopped scallions.
- • 8 slices rye bread; any dense European bread will do, toasted or untoasted.
- • Pickle strips, radishes or cherry tomatoes, for garnish.
Instructions
- 1.Cut chicken into bite size pieces.
- 2.Put the meat into a mixing bowl. Add the celery, onion and capers.
- 3.Blend together the yogurt, mayonnaise and vinegar and add to the chicken mixture. Add salt, pepper, parsley and scallions and toss to blend.
- 4.Make sandwiches, garnished, if desired.
