Chicken Salad Sandwich Recipe

Ingredients

  • • 1 lb. (500 g.) skinless and boneless chicken; poached, steamed or lightly grilled.
  • • 3 Tbs. finely chopped celery.
  • • 2 Tbs. finely chopped onion.
  • • 2 Tbs. drained capers.
  • • 2 Tbs. Yogurt.
  • • ¼ cup real mayonnaise, preferably homemade.
  • • 1 tsp. red wine vinegar, or to taste.
  • • Salt and FG pepper to taste.
  • • 1 tsp. finely chopped parsley.
  • • 2 tsp. finely chopped scallions.
  • • 8 slices rye bread; any dense European bread will do, toasted or untoasted.
  • • Pickle strips, radishes or cherry tomatoes, for garnish.

Instructions

  1. 1.Cut chicken into bite size pieces.
  2. 2.Put the meat into a mixing bowl. Add the celery, onion and capers.
  3. 3.Blend together the yogurt, mayonnaise and vinegar and add to the chicken mixture. Add salt, pepper, parsley and scallions and toss to blend.
  4. 4.Make sandwiches, garnished, if desired.
