Delicious Chicken Sandwiches

Ingredients

  • 4-5 Plum tomatoes quartered
  • 2 tbs Balsamic Vinegar
  • 4 wedge laughing cow lite
  • 1/2 - 1 breast rotisserie chicken shredded
  • 2 cups spring mix or baby spinach
  • 1/4 cup reduced fat or fat free mayo
  • 1 tablespoon coarse dijon mustard
  • 1 clove fresh garlic, pressed
  • 1 loaf French bread

Instructions

  1. Spray a large nonstick skillet and place over medium-high heat. Add tomatoes; cook 2 minutes, turning once. Remove from heat; stir in 2 tablespoons balsamic vinegar.
  2. Combine mayonnaise, mustard, and garlic in a small bowl. Spread mayonnaise mixture evenly over top half of bread loaf.
  3. Spread cheese onto other half and top with warm tomatoes. Layer chicken on top.
  4. Toss greens with vinegar, gently to coat. Top chicken with greens mixture; replace top half of bread. Cut loaf into 6 pieces.
