Eggnog Mini Loaves Recipe

Ingredients

  • 2-1/4 cups all-purpose flour
  • 2-1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 Eggland’s Best Eggs
  • 1 cup eggnog
  • 3/4 cup sugar
  • 1/2 cup butter melted
  • 2 teaspoons vanilla extract
  • 2 teaspoons rum
  • 1 cup pecans toasted and chopped

Instructions

  1. 1.In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.(sift together three times.) In another bowl, beat the eggs, eggnog, sugar, butter and extracts; stir into dry ingredients just until moistened.
  2. 2. Pour into three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks
