Eggnog Mini Loaves Recipe
Ingredients
- 2-1/4 cups all-purpose flour
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 2 Eggland’s Best Eggs
- 1 cup eggnog
- 3/4 cup sugar
- 1/2 cup butter melted
- 2 teaspoons vanilla extract
- 2 teaspoons rum
- 1 cup pecans toasted and chopped
Instructions
- 1.In a large bowl, combine the flour, baking powder, salt, cinnamon and nutmeg.(sift together three times.) In another bowl, beat the eggs, eggnog, sugar, butter and extracts; stir into dry ingredients just until moistened.
- 2. Pour into three greased 5-3/4-in. x 3-in. x 2-in. loaf pans. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks
