Chicken Salad with Blueberries

Ingredients

  • 1/2 cup Greek Yogurt Reduced-fat plain
  • 2 tbsp olive oil mayo
  • 2 tsp fresh lemon juice
  • 1 tsp honey
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 2 cups rotisserie chicken chopped
  • 1 cup blueberries
  • 2 green onions chopped
  • 2 tbsp fresh mint chopped
  • 1/2 package (5 oz) Arugula
  • 1 cup seedless red or green grapes halved
  • 1/2 cup red onion thinly sliced
  • 1 1/2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 3/4 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 cup reduced-fat feta Crumbled

Instructions

  1. Stir together yogurt, mayonnaise, lemon juice, honey, salt, and pepper. Stir in chicken, berries, onions, and mint. Serve immediately or chilled.

  4. Place arugula in a bowl, and top with grapes and onion. Whisk together oil, vinegar, mustard, salt, and pepper. Toss with salad. Top with cheese.
