Chicken Salad with Blueberries
Ingredients
- 1/2 cup Greek Yogurt Reduced-fat plain
- 2 tbsp olive oil mayo
- 2 tsp fresh lemon juice
- 1 tsp honey
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups rotisserie chicken chopped
- 1 cup blueberries
- 2 green onions chopped
- 2 tbsp fresh mint chopped
- 1/2 package (5 oz) Arugula
- 1 cup seedless red or green grapes halved
- 1/2 cup red onion thinly sliced
- 1 1/2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 3/4 tsp Dijon mustard
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup reduced-fat feta Crumbled
Instructions
- Stir together yogurt, mayonnaise, lemon juice, honey, salt, and pepper. Stir in chicken, berries, onions, and mint. Serve immediately or chilled.

- For the Arugula and Grape Salad with Feta
- Place arugula in a bowl, and top with grapes and onion. Whisk together oil, vinegar, mustard, salt, and pepper. Toss with salad. Top with cheese.
