Carrot Cookies Recipe
Ingredients
- 1 cup butter, softened
- 3/4 cup sugar
- 1 cup mashed, cooked carrots
- 1/2 teaspoon lemon extract
- 1/2 teaspoon almond extract
- 2 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup chopped nuts
- 1/2 cup golden raisins
Instructions
- Beat butter, sugar, mashed carrots and extracts together until well-blended.
- Combine flour, baking powder and salt. Add to creamed mixture, and mix well.
- Stir in nuts and raisins.
- Drop by heaping teaspoonfuls onto a greased cookie sheet.
- Bake at 350 degrees for 20-25 minutes until lightly golden.
